         This book is one of two highly-regarded nutritional resources by the authors of Cancer-Free: Your Guide to Gentle, Non-toxic Healing (previously mentioned) because it contains a wealth of scientifically researched and documented material, rather than merely presenting opinions like many other nutrition books.

         The book is approximately 650 pages long and comprises 19 chapters. The authors are a father and son: the father is Professor and Doctor of Biochemistry T. Colin Campbell, now 91 years old, and the son is Dr. Thomas M. Campbell.

         Much of the authors' scientific evidence comes from human studies conducted in China and animal studies. These studies have been published in prestigious journals. The results show that a vegan diet offers more benefits than medication and surgery.

         The authors divide the chapters according to the studies on the diseases studied; however, some key points can be summarized as follows:

    • Dairy products are linked to type 1 diabetes;
    • Consumption of cow's milk and meats high in saturated fat is strongly associated with multiple sclerosis; Eating more animal-derived foods increases the risk of heart disease, osteoporosis, kidney stones, liver cancer (in people infected with hepatitis B virus), Alzheimer's disease, macular degeneration and cataracts, colon cancer, etc.
    • Cancer has three stages: initiation, promotion, and eruption. Animal studies show that: eating less protein can reduce tumor growth; plant protein does not promote cancer growth; cow's milk protein and casein are cancer-promoting agents. It should be noted that in the initiation stage, the impact of protein is less significant than in the cancer-promoting stage. From there, the authors continued to conduct studies on humans, and the results obtained are as follows:
      • Consuming more animal-derived foods increases the risk of breast cancer;
      • High fiber intake reduces the rate of colorectal and colon cancer;
      • Low vitamin C levels also lead to a higher incidence of cancer;

    ….

    • Diabetes: Whole, high-fiber, plant-derived foods protect Foods protect the human body against diabetes, while high-fat, high-protein, animal-derived products promote the development of diabetes.
    • The author opposes low-carbohydrate diets.
    • Prolonged exposure to sunlight, contact with industrial chemicals, and nutritional imbalances in the diet all increase free radicals, accelerating aging; when free radicals increase to uncontrolled levels, they can cause cataracts, cancer, arthritis, etc.
    • Genes are not responsible for disease. Good nutrition helps prevent diseases that are considered hereditary.
    • Nutritional supplements are not a panacea (except for vitamin B12 and vitamin D, which may need supplementation).
    • According to the authors, the optimal diet consists of: 10% of calories from fat, 10% from protein, and 80% from carbohydrates.…
